Peel and finely dice the onion. Gently fry the onion in a small amount of fat, until starting to soften, then set aside.
Brown the bacon and mince, then crumble in the stock cube. Add the onion, baked beans and ¼ – ½ of a tin of water.
Meanwhile preheat the oven to 200℃ and peel the potatoes.
Slice the potatoes and layer around the base and sides of an oven-proof dish. Add the meat and bean mixture to the center of the potatoes and cover with thinly sliced potatoes.
Cover the potatoes with a well greased piece of baking paper and cook in the over for 30 minutes.
Remove the baking paper and cook for another 30 minutes.
